I love this sweet and spicy soup! It's a perfect gift for a friend on a chilly November day.
2 cups peeled and chopped sweet potato
1 large peeled, cored, and chopped apple
2 cups chicken broth
1 cup almond milk (or regular milk)
4 ounces cream cheese
1 medium chopped onion
2 cloves minced garlic
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon nutmeg
Mix all ingredients in a crockpot and let simmer for about 3 hours. When the vegetables are mushy, puree in a blender. Enjoy! (Top with sunflower or pumpkin seeds if desired.)
